Instructions
You work the yolks with a small whip, slamming well and incorporating a little by little melted butter, sugar, grated rind of half a lemon, and half of its filtered juice.
You add and then stirring with a wooden spoon the sifted flour, pine nuts and egg whites very firm.
Pour the mixture into a mold of 24 cm in diameter and cook for 30 minutes in a preheated oven at 180 degrees.
When it is cooked and cooled, cut into two discs stuff with the custard and it reassembles.
It is to be kept in a cool place until served.
