Instructions
Work in butter cream with the sugar and lemon zest, mix, one at a time, the egg yolks, stir gradually to the mixture of flour, potato flour and yeast, and descended from a sieve.
Add to the mixture the clear mount until stiff, gently moving the spatula from the bottom up not to disassemble.
Pour everything into a hinged cake Tin (24 cm diameter), well buttered and floured and bake at 170 degrees for 50-55 minutes, without absolutely open the oven, at least in the first 30 minutes.
Then remove from the oven, allow to cool on a wire rack from sweets, then turn out and sprinkle with powdered sugar, to taste.

- 300 g of granulated sugar

- 150 g of 00 flour
- 150 g of starch
- 4 eggs
- == 1 lemon (zest)
- 1/2 teaspoon of baking powder
