Triumph throat
Instructions
Prepare a 30 cm diameter of Spain and two discs of the same diameter of pastry.
On a plate place service as the pan of Spain, ranging softened with rum or liqueur cakes; on its surface it smears a pistachio Marmalade layer which will be covered by a disk of pastry; on this slap a yellow cream (cold dissolve 70 g of starch in 100 cl of milk and pass through a sieve, add 4 egg yolks and 200 g sugar; everything in a copper pan, place on fire and hot until you have the desired consistency); It covers with the other disk of pastry which is in turn overlain by a layer of custard.
The everything is lined with a thin layer of marzipan, after previously spread apricot jelly.
Decorate with candied fruits and/or pistachios grit.

- Disc 1 of pan of spain
- 2 disks of short pastry
- Rum (or spirits)
- 70 g of starch
- 100 cl of milk
- 4 egg yolks
- 200 g of sugar
- Almond paste
- Apricot jelly
- To decorate:
- Candies
- Pistachio grit
