Snow eggs with coffee cream
Instructions
Mix the egg yolks with the flour and 1/3 of the sugar then stir the warmed milk and cream and coffee.
Let thicken the cream in a double boiler and allow to cool.
Whip egg whites until foamy, add remaining sugar.
Fill a pot with water, bring to the boil and pour the egg spoons.
Drain on paper towels and let cool.
Pour onto a serving dish, pour over cream eggs to snow, decorated with orange zest and serve.

- 4 eggs
- 1/2 teaspoon of flour
- 100 g of sugar
- 13 cl of milk
- 35 cl of cream
- 1/2 cup of coffee
- 30 g of almond flakes
- Orange rind
