Instructions

FISH TERRINE 01525 INGREDIENTS for 4 PEOPLE 400 g of chopped white fish (COD, hake, etc), 200 g of clams, 100 g of shrimp tails, a box of mashed potatoes, 200 ml whipping cream, 30 g butter, 75 g of tuna in oil, 6 anchovy fillets, 1/2 Peel lemon.

For the sauce: 200 ml of mayonnaise, 6 tablespoons of ketchup, a lemon, salt and pepper.

Do purge the clams under running water for several hours.

Put in a saucepan, fish, clams, shrimps, ó l water, lemon peel and 1 teaspoon salt; Cook for 10 minutes, drain and keep aside.

Prepare the mashed potatoes with 1/2 l seafood broth from a sieve fine texture and 25 g of butter.

Add the clams, prawns peeled and sliced and chopped anchovies and stir well integrating the mashed with a spoon.

Passed in a mixer at medium speed the well drained from white fish cooking water, tuna and cream until you get a mashed up; Add salt and pepper by grinding.

Stir gently.

The walls and lined the bottom of a mold by plum-cake with mashed and fill it with the preparation of fish and tuna.

Bake for 15 minutes and average dessert, turn out.

Serve cold, covered with sauce made with mayonnaise mixed with ketchup.
