Couscous with dried fruits

01014 COUSCOUS to DRIED FRUIT INGREDIENTS for 5 PERSONS 500 g couscous, 2 tablespoons oil, 150 g walnuts, 100 g of dried apricots, 100 g of dates, 150 g butter, 100 g sugar, salt Put to soak the night before the dried apricots and let them soak over night.
The next day drain and divide them into four parts.
Boil 4 quarts of water in a pot for cooking the couscous and Couscous pot.
Put the couscous in a large bowl, add the apricots, olive oil and two pinches of salt, knead with your hands until the ingredients are completely mixed.
Add gradually 1 dl water stirring.
Place the pastry on top of the couscous pot, and simmer for 20 minutes without cover.
Meanwhile, pitted dates and divide them into four parts, shelled walnuts and chop coarsely.
Remove the couscous and cover the pot.
Mixing gently together with couscous 3 l of water, store it in couscous pot and continue cooking for 15 minutes.
When cooked, put the couscous in a serving dish, add the butter and sugar, then the dates and walnuts, mix everything together and serve immediately.
