RISOTTO with NETTLES 2
Instructions
RISOTTO with NETTLES 02306 INGREDIENTS for 4 PERSONS 250 g of Arborio or Vialone rice, 300 g of nettles, 1/2 onion, 50 g butter, 1/2 glass of white wine, broth, 2 tablespoons grated Parmesan cheese.
PROCEDURE wash the stinging nettles and drain.
Chop the onion and put it in the pan with half of the butter and let it wilt.
Join the rice making seasoning, sprinkling it with wine and let and vaporare.
Add, a little at a time, the boiling soup, stirring occasionally.
About halfway through the cooking add the nettles.
When the rice is cooked turn off and add the remaining butter and the Parmesan cheese.
Stir and serve.
