A03194 GREEN DUMPLINGS INGREDIENTS for 4 PEOPLE 500 g potatoes 500 g of spinach, salt, 2 eggs, 100 g flour plus flour for the pastry Board, pepper, grated nutmeg, 50 g of grated Parmesan cheese, 80 g of butter, a few leaves of Sage, 3 tablespoons cream.

Join eggs and begin to knead the ingredients, adding flour a little at a time; season with salt, pepper and nutmeg and stir the Parmesan.
Transfer the dough on floured pastry Board, cut into fairly large cords of and from these, you will create a dumpling that pieces by sliding on the teeth of a fork.
Bring to a boil salted water and dip the dumplings; gradually come to the surface, drain the skimmer and transfer to a warmed soup tureen.
Sauté in a pan with butter and Sage, add the cream and simmer for a few minutes, then pour the hot sauce over the dumplings.
Stir and serve hot.
