Tripe in tomato sauce

TRIPE IN TOMATO SAUCE INGREDIENTS 06246 4 PEOPLE 1 kg of tripe, a tin of tomato sauce, 50 g of cured ham, 4 cloves, 2 onions, a ham bone, 2 red chillies, 2 Tablespoons extra virgin olive oil, herbs, paprika, salt.
Cook the tripe, PROCEEDING along the ham bone, onion and cloves, for an hour in salted water.
Drain, squeeze the tripe and keep the broth.
Saute onion in the oil, when slightly Golden, add the sliced ham, tomato sauce and diced chilies.
Sprinkle with pepper and herbs, pour the soup (1 quart) of cooking the tripe.
Season with salt and cook over low heat for an hour.
