Mixed salad with scampi marinade

08352 MIXED SALAD with SCAMPI MARINADE INGREDIENTS 4 PEOPLE 12 prawns, 1 tuft of curly Endive, 1 fennel, 1 orange, 1 head radicchio, 3 dl of red grape juice, 3 dl lemon juice, extra virgin olive oil, thyme, salt and pepper.
Preparation and cooking time: 30 minutes plus Marinating time difficulty: medium Shelled PROCESS only the tails of shrimp, keeping intact the heads, then rinse again in cold water crustaceans and boil.
In a soup-tureen 2 dl of oil emulsified with grape juice, lemon juice, a pinch of salt, a pinch of thyme and ground pepper.
Dip the shrimp in the sauce and let them marinate for at least four hours.
Clean the Endive and radicchio, wash in plenty of water and sgrondateli using the special centrifuge.
Coarsely chop the endives and cut the radicchio into strips.
Clean the fennel, wash it and cut it into thin slices.
Peel oranges and cut into shapes.
Drain shrimp, retaining the marinade.
Spread the vegetables on individual plates, decorative accomodandole so.
Join the moulds and finished with orange segments.
Slightly salted, sprayed the whole thing with the seal from the marinade and serve immediately.
