Pineapple bavarian (bavarese all'ananas)

17857 pineapple BAVARIAN CREAM INGREDIENTS for 6 PERSONS 400 g fresh or canned pineapple, 150 g sugar, 3 egg yolks, 3 egg whites, 1 tablespoon lemon juice, 1 sachet of vanilla, 4 sheets of gelatin for desserts.
For garnish: pineapple slices and cherries.
PROCEDURE put the gelatin sheets to soak in cold water.
Puree the pineapple, add sugar, egg yolks and lemon juice, pour the mixture into a pan and cook for 5 minutes.
Add the isinglass well squeezed and vanillin.
Pour the mixture into a bowl and let cool.
Add the egg whites with cream of pineapple.
Put the mixture into a mold slightly greased with oil and store it in the fridge to firm.
Put on a serving dish, garnish with pineapple slices and cherries and serve.
