19568 MARRON GLACE? INGREDIENTS for 4 PEOPLE 1 kg of chestnuts, 300 g sugar, a stick of vanilla. Clean the chestnuts, still raw, without breaking them. Place in a saucepan, preferably in a single layer, cover with cold water, add 100 g of sugar and cook over low heat for 20 minutes, until they are soft but still very substantial. Estraetele and let them dry on a rack for pastry. Put in casserole, you have rinsed quickly, remaining sugar and 2 teaspoons of water and vanilla; stir over low heat until the sugar has melted, then simmer slowly until, raising a little syrup, it forms a kind of thread: don't make it caramelize. Place the chestnuts in casserole dish in a single layer and boil sweet focus for a couple of minutes. Estraetele, allineatele on the plate lined with parchment paper and let them dry in the oven at 150ø.
