Pears in puff pastry
Instructions
INGREDIENTS for 4 PEOPLE 4 pears kind Luigia, 75 cl of Perry, a lemon, a box of ready-made puff pastry, 2 tablespoons honey, a cinnamon stick, a passion fruit, 100 g brown sugar (cassonade), an egg yolk, 4 tablespoons sugar.
Preheat oven to 240ø.
Squeeze the lemon.
Peel the pears without removing the petiole and drizzle with lemon juice.
In a saucepan add 50 cl of PEAR cider, add pears and white sugar.
Caramelized pears cuocendole for about 20 minutes to fire or 5 minute cake microwave oven at maximum power.
Drain the pears.
Cut the puff pastry into 4 parts and put them around the pears, leaving out the petiole.
Brush the dough with the egg yolk, beaten earlier.
Bake and cook the pears for 10 minutes; then lower the temperature to 180° and continue cooking for another 20 minutes.
Meanwhile, prepare honey syrup.
In a saucepan pour 25 cl of PEAR cider, add cassonade, cinnamon, honey and the pulp of passion fruit.
Cook for 15-20 minutes at Campfire cake, until a thick syrup.
Placed on each individual dish a PEAR in puff pastry, garnished with slices of PEAR and pour the honey syrup.
