Mini cheese souffle ' with caviar

00898 MINI SOUFFLE ' with CAVIAR CHEESE INGREDIENTS for 4 PEOPLE 50 g grated gruyer, 50 g goat cheese, 2 natural yoghurt, 2 eggs, 2 tablespoons flour, 2 teaspoons of grated bread, caviar, cream, salt and pepper.
Heat the oven to 180° Break eggs and keep the yolks from egg whites; whip the egg whites until very firm snow adding a pinch of salt.
In a bowl, mix the egg yolks, yogurt, flour and cheese, add salt, pepper and stir.
gently stir the egg whites, then spread the mixture into 4 buttered ramekins and sprinkling them with the bread crumbs.
Place the ramekins in the oven for about 20 minutes, should be of gold, and serve right away by adding a spoonful of caviar
