Tomato salad, arugula and shrimp

08392 TOMATO SALAD, ARUGULA and shrimp INGREDIENTS for 4 PERSONS 250 g of shrimps, 300 g of tomatoes, 2 bunches of wild rucoletta, 2 small spring onions, 20 g of extra virgin olive oil, 2 tablespoons of vinegar, salt, pepper.
Defrosted shrimp PROCEEDINGS by putting them under cold running water.
Put them in a bowl and add the washed and dried tomatoes and cut into slices.
Season with salt and half the oil and vinegar.
Stir and let stand for the time it takes to wash and dry the salad.
Dress the salad with salt and oil and remaining vinegar and arrange on 4 plates.
Put shrimp on top with the tomatoes and their liquid.
Garnish with spring onions, cut into thin wedges or slices.
