3_07128 COD FILLETS IN PEANUT CRUST INGREDIENTS for 4 PERSONS 4 small slices of hake, 50 g peanuts, a sprig of thyme, 2 egg yolks, 2 tablespoons peanut oil, salt and pepper. The coarsely chopped peanuts and place them in a bowl. Add salt, pepper, thyme leaves and mix well. Pour into a deep dish. In a bowl beat the egg yolks with a fork and oil. Preheat oven to 210° Passed the cod slices in beaten yolks, then in chopped peanuts, forming a homogeneous crust. Place the breaded cutlets in a previously greased baking dish and bake 12 minutes, taking care to turn the steaks halfway through the cooking. When cooked, serve immediately.
