Crostini with duck breast and bean curd cream

00052 CROSTINI with DUCK BREAST and BEAN CURD CREAM INGREDIENTS for 24 PIECES A box containing 100 g of smoked duck breast, 100 g frozen beans, an artichoke, rucoletta leaves 20, 30 g of ricotta cheese, salt, pepper, 24 small oval crackers.
Peel the artichokes in order to preserve only the heart, cut into 2 and remove the Hay contained within.
Put the beans in boiling salted water along with artichokes and cook until everything is tender, about 10 minutes.
Drain, remove outer skins of beans and put them, peeled, with artichokes in a blender along with shredded Arugula leaves and ricotta; season with salt and pepper and blend until a smooth puree.
Dial now resting on each crostini crekers a slice of duck breast, garnish with a teaspoon of green cream.
