Instructions

Fitted long jam with sugar until mixture is puffy and fluffy, add the grated lemon rind and juice passed to colander.

Beat until foamy egg whites firmly and mix them to mixture; Grease a mould, pour the cream and jam, and cook in a Bain-Marie (water should always simmer) until inserting one stick in this pudding comes out clean.

Put, let cool and serve with custard.
