Frosted cupcakes
Instructions
Mix 2 eggs, 50 g soft butter, 200 g sugar, 2 tablespoons honey, 200 ml milk, 300 g spelt flour and 1 teaspoon of baking powder. Pour into a baking paper lined rectangular oven and bake at 170 degrees for 20 minutes. Allow to cool and cut into cubes.
Prepare the frosting with 250 g of butter, 250 g sugar, 12 tablespoons milk, 2 tablespoons of rum and 4 tablespoons cocoa. Let simmer 2 minutes and let cool. Soak the cubes in icing and pass them in shredded coconut (250 gr). Leave in the fridge for a few hours. Preparation time: 1 hour and 45 minutes total (but it's worth it ... too good!)
