Fish consommé with scallops
Instructions
Place the small fish broth in a saucepan and bring it to a boil.
Meanwhile open the scallops, remove the clam and eliminated the coral, which can be used differently.
Divide into two clams with a horizontal cut and cook for a while (about 1/2 minute) in the fumet of fish brought to a boil in a saucepan.
Spread the beef broth into four cups and place in each two pieces of scallops and 1/2 teaspoon of caviar.
Garnish with dill and serve.

- 4 scallops
- 10 cl of fish fumet
- 4 teaspoons of caviar
- 4 needles of dill
