Instructions
In a pot put the chopped meat, chopped vegetables and egg whites.
Pour the cold broth and stir well.
Place over heat and bring to a boil stirring constantly.
Lower the heat and simmer for about an hour.
Then strain the broth with a canvas.
If you want to profumarlo, each Cup add a tablespoon of dry sherry.
Accompanying wines: no wine, because the soup is designed to cleanse the taste buds.

- 300 g of minced beef
- 2 egg whites
- 1 leek
- 1 carrot
- Celery
- 250 cl of meat broth
