Cream of asparagus
Instructions
This soup is very much appreciated.
You can prepare with canned asparagus or asparagus fresh or cooked.
Add the desired amount of meat stock to asparagus cooking water and bring to a boil.
Dilute 1 cup of rice flour (in the absence of regular flour take) in milk and pour into the boiling soup, stirring constantly.
The cooking time is about 30 minutes.
After passing the soup to Blender, add an egg yolk and a little Creme Fraiche and, at the last moment, chopped asparagus ends.

- Meat broth
- 1 cup of rice flour (or flour)
- Milk
- 1 egg yolk
- Little of fresh cream
