Cold cream with blueberries
Instructions
In a saucepan pour the cream, milk and sugar; simmer until the liquid has reduced by half.
Levatelo from heat and let it cool; Add then the blueberries well cleaned by passing them by using disk Mashers, and egg yolks.
Stir vigorously with a small whisk then place the saucepan on the heat and stirring constantly bring the mixture almost to boiling; remove the Pan from the stove and immerse in ice water.
Stir occasionally until cream having nice cool, then use it to stuff layered cakes.

- 750 g of fresh cream
- 250 g of blueberries
- 250 g of milk
- 150 g of granulated sugar
- 2 egg yolks
