Melt in a pan 70 g.
of sugar with a tablespoon of water and let it caramelize, then pour it into the mold is still warm.
Boil the milk with the lemon zest and allow it to cool.
Beat the eggs with sugar, add milk, pour into the mould and bake in a double boiler on the stove for about 15 minutes and, again, in a Bain-Marie in the oven for 45 minutes.
Let cool, then unmold and serve.
