Beat the meat slices.
On each put grated pecorino cheese, parsley leaves, slices of garlic, salt, pepper.
Forming tight rolls and sew to imprison the filling.
Sauté in lard.
Can be eaten immediately or kept in their lard in earthenware jars.
They heat up in lard with sliced potato or tomato sauce to season the pasta.
