Instructions

Salt and pepper the meat.

Clean celery and carrot leaving them whole.

Put the meat in 1 tall saucepan, combine butter, spices, vegetables and pour the milk at room temperature up to about 3/4 of the meat.

Cover the casserole, bring to a boil and let simmer over low until the meat is tender and the milk is thickened to form a golden cream well.
