Cod to torcello
Instructions
Wash the salt cod, remove the bones and skin, cut into pieces, flour it and fry it in a pan with a little oil.
Then add chopped half an onion and cook for 10 minutes, stirring often.
Remove from heat and keep warm.
In another saucepan Brown the rest of the chopped onion with the garlic, olive oil, Rosemary, bay leaf, chopped tomato pulp and concentrate; Add salt and pepper and continue cooking for 25 minutes on moderate heat.
Pour this sauce over the fish, sprinkle with chopped parsley and serve.

- 1000 g of cod soaked
- 400 g of tomatoes
- 1 tablespoon of tomato paste
- Chopped parsley
- 1 onion
- 1 sprig of rosemary
- 1 clove of garlic
- 1 leaf of laurel
- Flour
- Salt
- Pepper
- Olive oil
