Melanzane alla gridiron
Instructions
Slice eggplants lengthwise and put them in salt.
Then rinse and dry with a cloth.
Cut them slightly to facilitate cooking.
Put them in a bowl with oil, garlic, parsley, salt and pepper and leave to marinate for 20 minutes.
Heat the grill and brown them 10 minutes per side.

- 6 small eggplant
- 2 cloves of chopped garlic
- 1 handful of chopped parsley
- 4 tablespoons of olive oil
- Salt
- Pepper
