Oriental spice rice
Instructions
Cut the leaf cashews, crushed cardamom and cloves, wash the rice in plenty of cold water, let it drain well and dry it.
Then heat in a saucepan the butter and olive oil and rice saucepan with cardamom and cloves, moderate heat for 3-4 minutes, stirring occasionally with a wooden spoon.
Add the cashews, the cinnamon and the peas and let flavour all together for a few minutes, then add the raisins, salt and a ground pepper, and pour into four glasses of water, continuing to stir.
Simmer the rice in moderate heat and half-open casserole for about 20 minutes, stirring so that it can absorb all the water.
At the end turn off the heat, put the rice in a serving dish and serve hot, accompanied with shrimp or chicken or roasted meat of lamb.
