Cold rice with shrimps
Instructions
To boil the rice in salted boiling water, leave it to drain and allow it to cool down.
Wash the shrimp and place them in a saucepan with lightly salted boiling water and flavoured with two slices of lemon and a bay leaf.
After 8 minutes, drain and leave to cool, then remove the shells.
Season the rice with the cognac and with much of the prepared mayonnaise and half of the shrimp.
Put the whole thing in the fridge for at least a couple of hours.
Before taking on the table cover rice with scampi with tomatoes, sliced and decorate with the remaining mayonnaise to which have been added some chopped parsley.
Ingredients and dosing for 4 persons
- 250 rice for salads
- 600 g of shrimp
- 2 tablespoons of cognac
- 2 pear tomatoes
- For the mayonnaise:
- 2 eggs
- 300 g of olive oil
- 1 lemon
- Salt
- Pepper
