Sardines rolled up
Instructions
Skinned tomatoes, divide them into wedges, remove the seeds.
Fillet sardines, leaving their skin.
Open them in half without splitting the back.
On each place an anchovy fillet and a slice of tomato.
Roll them up and fermatele with a stick.
In a bowl mix bread, parsley and chopped garlic clove, salt and pepper; softened with a little olive oil.
Oil a frying pan and sprinkle the rolls, sprinkle them with the mixture of bread making it adhere well.
Sprinkled with a little olive oil and sprinkle with the juice of half a lemon.
Cover and cook for 30 minutes over low heat.

- 20 sardines
- 20 anchovy fillets
- 3 tomatoes
- Parsley
- 2 tablespoons of breadcrumbs
- 1 clove of garlic
- 1/2 lemon (juice)
- Olive oil
- Salt
- Pepper
