Clean, open, de-boned sardines.
Put them in flour, then in beaten egg with a pinch of salt, and then in the breadcrumbs.
FRY in very hot oil but not smoking, for about 7 minutes turned once.
Drain and dry on absorbent kitchen paper.
Serve with lemon wedges.
Fried sardines, whether fried, are softer than the other.
Accompanying wines: wines of the Piave DOC Tocai, Est! Est!! Est!!! Di Montefiascone DOC Cirò Bianco DOC.
