Pear parfait
Instructions
Cut pears into wedges and immersing for 10 minutes in water acidulated with lemon juice.
Blend with 200 g of sugar, juice of 1/2 lemon and 1 glass of brandy.
Stir in the cream, pour the mixture into a mold lined with plastic wrap.
Place in freezer for 5 hours.
Simmer for 3 minutes 200 g of sugar 20 cl of water, allow to cool, then add the more washed in wine and blend and a little lemon juice.
Serve the semifreddo with more sauce.

- 2 lemons
- 500 g of frozen blackberries
- White wine
