Cuttlefish otello
Instructions
Purchase of fresh cuttlefish, clean carefully keeping aside the ink glands, wash them well under running water, then cut the larger strips and leave whole smaller.
In a Pan fry the onion capable finely chopped and crushed garlic clove (take it out as soon as it takes color) in plenty of oil, then add the cuttlefish.
Simmer for 10 minutes and then washed with wine.
As soon as the latter will be evaporated, pour the fish stock or vegetable one (previously prepared) where you did dissolve the ink of cuttlefish.
Add salt and pepper and cook for half an hour, then serve.

- 1000 g of cuttlefish
- 1 scallion
- 1 clove of garlic
- Parsley
- 1 glass of fish stock (or vegetable stock)
- 1 glass white wine
- Olive oil extra virgin
- Salt
- Pepper
