Instructions
Open the mussels, remove clams, wash them and dry them carefully.
Remove gray border and separated the white pulp from coral.
Clam pieces strung on a skewer, alternating the two colors, season with salt and freshly ground white pepper and cook under a hot grill for 3-4 minutes.
Prepare the Chive Butter: in a small saucepan Cook the finely chopped shallots with the white wine until the liquid is reduced by half; join the fish fumet and let reduce everything to a third party.
Pass the sauce through a fine sieve, collected in the same small saucepan and add butter, very cold and into pieces.
Boil again, add salt and pepper and mix in the chopped chives.
Serve the mussels well prepared with hot sauce.

- 4 cl of dry white wine
- 10 cl of fish fumet
