Choose artichokes, very tender and remove the toughest outer leaves.
Cut them into slices, put them in a pan with a knob of butter and let stand for a few minutes.
Add salt, add a little warm milk to keep the artichokes and cook for 10 minutes.
Place in a buttered baking dish.
Beat the eggs, add salt sparingly and pour over artichokes.
Place the baking dish in a preheated oven at 200 degrees until eggs are softly curdled.
Serve.
