Instructions

Beat the eggs in a deep dish, mixing egg yolks and egg whites with salt, pepper or to taste a spoonful of milk for every egg used.

Pour the mixture in a pan greased with butter and Cook Sweet heat, stirring continuously with a wooden spoon.

When the eggs are similar to a cream, mix in a bowl off a knob of butter.

You can enrich with peas, asparagus tips, ham cubes, strips of smoked salmon.
