Instructions
Cut the sliced yellow squash fairly regular and deep fry in hot oil, add salt and pepper.
It should be kept in a pot and eliminated part of the oil from the pan.
Put the pan on the heat and add the vinegar and sugar.
stir with a wooden spoon and keep on very low heat until sugar is completely dissolved.
Turn off and pour it on the pumpkin slices.
At this point add the crushed garlic and Mint.
Let cool and serve at the table.

- 750 g of yellow squash
- 2 cloves of garlic
- Some leaves of mint
- Olive oil extra virgin
- 1 teaspoon of sugar
