Shrimp salad (insalata di gamberi)
Instructions
00510 SHRIMP SALAD INGREDIENTS 700 g 4 PEOPLE, 2 shrimp heads of Belgian Endive, a sprig of salad, 1 ripe tomato.
For the sauce: 1 liter of extra virgin olive oil, 120 g peanuts, 20 basil leaves, 1 tablespoon of lemon juice, salt.
PROCEDURE Put the shrimp in a saucepan and cover with water, put on the fire and when it will start boiling switch off.
Let cool the shrimp and sgusciateli.
Prepare the sauce, place the basil leaves into the mixer, add the oil, peanuts, lemon juice and salt, blend for a few seconds, until a smooth cream.
Browse the salad, wash them, dry them and arrange on plates.
Spread shrimp on salad and decorate with sauce.
Garnish with the tomato cut into fillets and some coarsely chopped peanuts.
