Instructions

00062 ASPARAGUS PUFF PASTRY INGREDIENTS for 4 PEOPLE 1 sheet of puff pastry, 1 bunch of asparagus, 1 egg, 3 bell peppers, 2 tablespoons vinegar, 2 tablespoons oil, parsley, salt and pepper.

Let thaw the puff pastry, roll out the dough with a matarello and cut it into 4 rectangles, brush with beaten egg and bake in very hot oven, so that the dough is puffed and just slightly and dori.

Remove the hard part of the asparagus and cook them in water with salt until they become tender (about 8 minutes), drain and keep them.

Wrap the peppers with the aluminum foil and cook in the oven so they will help loosen, Peel and puree in a blender with the oil, vinegar and parsley, in order to obtain a fine puree, seasoned with salt and pepper.

Place the asparagus on top of the pastry and cover with the sauce of peppers.
