Instructions

INGREDIENTS for 4 PEOPLE 250 g previously cleansed, shrimp 2 teaspoons nurro, one chopped scallions, egg, 12 4 cl of milk.

For Chervil butter: 5 tablespoons fresh cream, 100 g butter curls, the juice of 1/2 lemon, 3 tablespoons chopped fresh chervil, salt and pepper.

Preheat oven to 180° coarsely chopped shrimp.

In a saucepan, heat a teaspoon of butter and sauté chopped shallots.

Keep aside.

Beat the eggs with the milk, salt, pepper and add the shallots: mix well and then add chopped shrimp.

Stir.

4 small buttered flan moulds and split the mixture prepared above.

Place the molds in a baking dish 1/2 filled with water and place it in the oven: bake the flan in a Bain-Marie for about 20 minutes.

For Chervil butter: boil the cream.

Add salt and pepper, then stir butter, without ceasing to stir.

Add the lemon juice and Chervil.

Put the flan onto individual dishes and nappate with the sauce.

Served without waiting.

Accompanied with crispy baguette slices, garnish the flan with fresh parsley and, if you want to have that little bit extra, you can place a shrimp on each plate.
