Lettuce wraps with cheese and amaretto

2_05218 LETTUCE WRAPS with CHEESE and macaroons INGREDIENTS for 4 PEOPLE a box of fresh gorgonzola cheese, a head of lettuce, 8 strands of chives, 16 tablespoons chestnut honey, amaretti, 50 g breadcrumbs (s.q.) Clean the lettuce, eliminating wasted, sfogliatela leaves and wash 8 leaves more or less the same size under the water jet.
Drain and scottatele for a minute in a pot with boiling water.
Drain with a slotted spoon and stendetele to dry on a kitchen towel.
Crumbled amaretti in a food processor.
Place the cheese in a bowl and mix it with amaretti crumbs and 2 tablespoons honey.
Make toast the breadcrumbs in a frying pan over low heat and add to the bowl with the cheese mixture until obtaining a creamy soft but compact.
Split the preparation in lettuce leaves and stow 'em a little bundle, fasten them with the chives.
Let rest in refrigerator for at least 30 minutes and serve with remaining honey nappandoli.
