Plum compote
Instructions
Bleeds orange peel by eliminating the white part Peel and cut into julienne.
Put in a saucepan the plums, the threads of Peel, rum, sugar and 10 cl of water and cook for about 25 minutes on low heat.
Toast in a non-stick pan almonds.
Arrange the plums with the syrup in 4 bowls and decorate them with almond fillets.

- 24 pitted prunes
- 3 tablespoons of rum
- 3 tablespoons of sugar
- 1/4 oranges
- 1 handful of peeled almonds and fillet
