Instructions
Prepare an apricot sorbet, following the recipe.
Put in the freezer four large dessert cups.
Waiting for the sorbet will consolidate in the freezer, prepare apricots: wash them thoroughly, open them in half, deprive of stones, put them in a rather large skillet, sprinkle with sugar and cover with white wine; put the pan on the stove and cook apricots low flame until they hold; Let them cool in the cooking liquid, then drain, place them in a dish and sprinkle with a little apricot brandy; Let macerate for 15 minutes also.
Shortly before starting to prepare cups, mounted a dense snow cream (remember that it must be very cold), add the icing sugar and put it in a syringe for desserts.
Remove the bowls from the freezer and place on bottom of each three or four apricots with the cut side facing up.
Sprinkle on top of a layer of ice cream and ultimate with other apricots.
Decorated with whipped cream and serve immediately to prevent the ice cream may melt.

- 1 apricot sorbet (see recipe)
- 1000 g of fresh apricots
- Sugar
- White wine
- Little of apricot brandy
- 30 cl of whipping cream
- 2 tablespoons of icing sugar
