Instructions

Finely chop the onion, carrot, celery, a few leaves of Sage and Rosemary.

FRY in oil and butter.

Wash, dry and pass spare ribs in flour, then brown them in the sauce.

Add the wine and a bit of hot water, add salt and cook for about half an hour over low heat, covered.

Serve with polenta.
