Instructions

Clean the fennel, but retaining some barbette.

Slice very thinly and put them in a salad bowl.

Mix the mustard with the lemon juice, cream, oil and salt.

Then beat the emulsion, pour it over the fennel and stir.

Decorate with barbettes kept aside.
