Tuna omelet (2)
Instructions
Scalded the peppers over flame, spellatelo and cut into thin strips.
Peel and wash the parsley, dry and finely tritatelo garlic.
Saute the mixture on low heat with 3 tablespoons of oil, then add the chopped mackerel fillets.
Add the pepper and let stand for 3-4 minutes over low heat.
When cooked, add the crumbled tuna and drained, stir and lightly salted.
In a bowl beat the eggs with salt, pepper and 4 tablespoons of cream.
Add the mixture and stir.
In a pan heat two tablespoons of oil.
Pour the preparation and cook on low heat for 5 minutes.
Turn the omelette and finish cooking.
Serve tepid or cold, accompanying it with green or mixed salad.

- 1 red pepper
- 2 mackerel fillets in olive oil
- 150 g of tuna in olive oil
- 1 sprig of parsley
- 2 cloves of garlic
- 5 eggs
- 4 tablespoons of cream (or milk)
- 5 tablespoons of olive oil
- Salt
- Pepper
