Potato Pancakes (Frittelle di Patate)
Instructions
Wash potatoes and boil, unpeeled in salted water.
Drain, Peel and pass through a sieve.
Put the past in a saucepan, add a pinch of nutmeg, a whole egg and one egg yolk, cheese, pepper and mix well.
Form with the mixture of balls and smash them flat, then roll in the flour.
Heat the butter and oil in a cast iron pan, put the pancakes next to each other and FRY on both sides to moderate flame.
Wanting to make it more tasty and hearty, add potatoes 100 g of chopped fresh sausage.
Drain the pancakes cooking grease and leave to cool completely before serving.
