Instructions
Mix flour, sugar, salt, egg yolks and milk in order to obtain a homogeneous compound and fluid.
Join the egg whites very firm snow mounted.
In a pan melt the butter, pour in the mixture, and cook over a moderate flame.
Spread the raisins well drained and continue to cook.
With the help of two forks chop omelet, trying to get the irregular pieces and of medium size.
Serve immediately, sprinkling with plenty of powdered sugar.
This is a dessert that Emperor Franz Joseph was ghiottissimo.
You can serve it on its own, but is usually accompanied by a plum Compote or cranberry.
In Austria is served not only as a dessert as well as a single dish, especially at dinner.
Ingredients and dosing for 8 persons
- 100 g of soft-wheat flour
- 50 g of butter
- 4 egg yolks
- 4 egg whites mounted to snow
- 50 g of sugar
- 1 sachet of vanilla sugar
- 20 cl of whole milk (or fresh cream)
- Raisins soaked in rum
- 1 pinch of salt
- Abundant of icing sugar
