Avocados rellenos
Instructions
FRY in butter finely chopped onions.
Add the rice and FRY for 3 minutes, stirring with a wooden spoon.
Pour in the chicken broth, add salt and simmer at moderate flame for 20 minutes.
Cut the chicken breast into small pieces and add the parsley, half the grated cheese and the egg.
When the rice is cooked, add the mixture prepared with chicken and stir carefully, in order to melt the cheese.
Peel the avocados, cut them in half, remove the pits and pull gently the pulp with a spoon.
Then cut it into cubes and mix it with rice.
Squirt the avocados cut in half with lemon juice, put them in a buttered baking dish and stuff them with the previously prepared dough, sprinkle the rest of the cheese and cook in the oven at 220° until the dissolution of the cheese.

- 4 avocado
- 250 cheddar cheese
- 200 g of roast chicken breast
- 1 cup of rice
- 2 onions
- 1 egg
- 1 cup of chicken soup
- 4 tablespoons of chopped parsley
- 2 tablespoons of butter
- 1 tablespoon of lemon juice
- Salt
